To be able to learn more about this seafood product, let us learn how to create it. First of all, skipjack tuna will be caught by the fisherman from the deep sea. It will then be gut and gill right after it is caught and then it will be chilled so it can still be fresh along the journey when the fishermen brings it into the factory. However, the skipjack tuna that you can get directly from the fishermen is the freshest and the best skipjack tuna form that you can get. Sadly it is quite hard to get this skipjack tuna form in the market. The reason might be because the skipjack tuna fish itself has large size, thus it will be difficult for you to consume the whole fish. This is why the fishermen choose to sell the skipjack tuna that they caught to the factory which will create skipjack tuna loin for you to consume.
The skipjack loin itself is still the same with the skipjack tuna that the fishermen caught. However, it is sold in smaller size thus it already in suitable portion which you can consume easier. Now let us continue to follow the making process of skipjack loin. When the skipjack tuna is arrive in the factory, and then the workers will clean the tuna to remove all of the bone, skin, and the blood line from the meat.
The factory will also use professional grader which already holds certification to choose skipjack tuna meat that has high quality which will be then be turned into skipjack tuna loin. Afterwards the meat will be delivered to the cutting production line so they can cut it into loins. The factories will have their own specification for the skipjack loin that they create. Thus the skipjack tuna will be cut according to the specify weight that they decide before.
Actually there are two kinds of skipjack loin products that the factories will make using the loin which created on previous processing line which are the frozen skipjack loin CO treated and frozen pre cooked skipjack tuna loin.
To make the frozen skipjack loin, the first thing that needs to be done is to do CO treatment on the skipjack loin product. This treatment is done to make the loin still have their colors even after a long time. It is done by using cold smoke method with filtered wood smoke as the material. When the skipjack loin is not processed with this CO treatment, the color of the tuna meat will turn into brown gradually. This will make the tuna meat not appear fresh anymore thus people would not want to purchase it. That is why the treatment is needed to keep the fresh red color stays on the skipjack tuna loin CO treated product even though it does not change any other things. Now the skipjack loin co treated is ready for the next processing line.
Meanwhile to make the pre cooked skipjack loin, the skipjack loin from cutting processing line will be put inside pre cooker machine which will steam the meat in vacuumed condition and cool it down before being send into the next processing line.
The last processing line that both skipjack loins going through is the packing line. In here the skipjack loin will be packed individually inside vacuumed pack. Then it will be frozen in in -40 degree Celsius temperature to ensure the skipjack loin products stays fresh for longer time. Then the skipjack tuna loin products are ready to be distributed to the customer.
